Cinnamon Sugar Roasted Almonds

Ingredients:
16 oz Raw Almonds 1 Egg White 1 Tbsp Vanilla Extract 1 Cup Sugar 1 1/2 Tsp Sea Salt 2-3 Tsp Ground Cinnamon Shortening, for greasing the pan
Directions: Preheat oven to 250 degrees F. Grease a baking sheet with shortening. Do not use parchment paper, bake directly on the baking sheet. In a small bowl, combine the sugar, salt, and cinnamon (use 2 or 3 tsp, according to taste). Set aside. In a large bowl, add the egg white and vanilla. Use a whisk to whip together until frothy. Add the almonds and toss to evenly coat. Once the almonds are coated, add the cinnamon/sugar mixture to the almonds and toss to evenly coat again. Pour the almonds onto the prepared baking sheet and spread in a single layer. Bake for 1 hour, stirring every 15 minutes. Remove from the oven and give a final stir. Either enjoy warm or store in an airtight container on the counter.
