Ingredients:
Zest and Juice of 1 Lemon
6 Garlic Cloves, crushed
1/2 Cup Olive Oil
1 Tbsp Black Pepper
2 Tsp Kosher Salt
2 Tsp Dried Oregano
3 lbs Chicken Wings
Crumbled Feta Cheese, for topping
Start by marinating the chicken wings. In a large bowl, whisk together the lemon zest, lemon juice, crushed garlic, olive oil, black pepper, salt, and oregano.
Place the wings in a large Ziploc bag. Pour the sauce over the top. Seal the bag and toss to coat. Store in the fridge for at least 2 hour or up to 12 hours.
Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
Remove the wings from the marinade and place on the baking sheets in an even layer, leaving space between each wing.
Bake for 30 minutes, then rotate the baking sheets and bake for an additional 30 minutes or until the internal temperature is 165 degrees F. The wings should start to turn golden brown and crispy.
While the wings are baking, make the sauce (see ingredient list below). In a large bowl, whisk together the olive oil, lemon juice, minced garlic, cayenne pepper, black pepper, and salt. Once the wings are done baking, add the parsley and stir to combine.
Remove the wings to a serving platter. Drizzle the sauce over the top. Sprinkle crumbled feta over the top. Serve warm.
