Ham & Cheese Breakfast Quesadilla

|2-3 Eggs, soft scrambled|
|1/4 Cup Ham, diced and precooked|
|1/3 Cup Shredded Cheddar Cheese|
|Salt and Pepper, to taste|
- Start by soft scrambling the eggs. Season with salt and pepper, to taste. Set aside.
- Heat a skillet over medium heat. Add one tortilla. Top with ½ the shredded cheese. Add the ham, eggs, and top with the remaining shredded cheese. Place the other tortilla on top. Heat for 3-4 minutes or until the bottom tortilla is starting to turn golden brown and the cheese is melted.
- Carefully use a spatula to flip over the quesadilla. Heat on the other side for 2-3 minutes.
- Remove from the pan, slice, and serve.
