Sheet Pan Mediterranean Shrimp





Ingredients:
| 1 lb Large Shrimp, peeled |
| 1 Bunch Fresh Asparagus |
| 2 Tbsp Olive Oil |
| 3-4 Garlic Cloves, minced |
| 1 Red Onion, sliced |
| 2 Tsp Oregano |
| 2 Tsp Paprika |
| Sea Salt and Black Pepper, to taste |
| Juice from 1 Lemon |
| 1 Cup Kalamata Olives, pitted |
| 1 Cup Feta Cheese, crumbled |
| 1/3 Cup Fresh Parsley, chopped |
Directions:
- Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.
- Add the shrimp to a large bowl. Add 2 Tbsp olive oil, garlic, salt, pepper, paprika, oregano, and lemon juice. Toss to combine.
- Wash and trim the asparagus. Lay in a single layer on the baking sheet.
- Place the shrimp on top of the asparagus.
- Scatter the red onion on top of the shrimp.
- Bake for 10-12 minutes on the middle rack
- Remove from the oven and top with crumbled feta, olives, and fresh parsley.
- Serve immediately and enjoy!
