Sheet Pan Mediterranean Shrimp

Ingredients:

1 lb Large Shrimp, peeled
1 Bunch Fresh Asparagus
2 Tbsp Olive Oil
3-4 Garlic Cloves, minced
1 Red Onion, sliced
2 Tsp Oregano
2 Tsp Paprika
Sea Salt and Black Pepper, to taste
Juice from 1 Lemon
1 Cup Kalamata Olives, pitted
1 Cup Feta Cheese, crumbled
1/3 Cup Fresh Parsley, chopped

Directions:

  1. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.
  2. Add the shrimp to a large bowl. Add 2 Tbsp olive oil, garlic, salt, pepper, paprika, oregano, and lemon juice. Toss to combine.
  3. Wash and trim the asparagus. Lay in a single layer on the baking sheet.
  4. Place the shrimp on top of the asparagus.
  5. Scatter the red onion on top of the shrimp.
  6. Bake for 10-12 minutes on the middle rack
  7. Remove from the oven and top with crumbled feta, olives, and fresh parsley.
  8. Serve immediately and enjoy!
