Greek Chicken Lettuce Wraps with Tzatziki Sauce

Ingredients:
2 lbs Boneless Skinless Chicken Breasts, cut into 1-inch pieces
2 Tbsp Lemon Juice
2 Tsp Dried Oregano
2 Tsp Fresh Chopped Parsley
2 Tsp Garlic Powder
1 Tsp Salt
1/2 Tsp Black Pepper
2 Tbsp Olive Oil
1 Cup Cherry Tomatoes, halved
1 Cup Cucumber, chopped
1/2 Cup Red Onion, thinly sliced
12 Lettuce Cups
Make the Tzatziki Sauce (see ingredient list below). Add the Greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to a mixing bowl. Stir to combine. Taste and adjust seasoning as necessary. Cover and refrigerate until ready to use.
Slice the chicken. Add the chicken, lemon juice, oregano, parsley, garlic powder, salt, pepper, and oil to a mixing bowl. Toss to coat.
Heat a large skillet over medium heat. Add the seasoned chicken and cook for about 10 minutes, flipping halfway, or until cooked through. Remove from the heat.
Assemble the lettuce wraps. Add a scoop of chicken to each lettuce cup. Top with tomatoes, cucumber, and red onion. Drizzle the tzatziki over the top. Enjoy!
