Greek Chicken Lettuce Wraps with Tzatziki Sauce





Ingredients:

2 lbs Boneless Skinless Chicken Breasts, cut into 1-inch pieces+ Add to Shopping List |
2 Tbsp Lemon Juice+ Add to Shopping List |
2 Tsp Dried Oregano+ Add to Shopping List |
2 Tsp Fresh Chopped Parsley+ Add to Shopping List |
2 Tsp Garlic Powder+ Add to Shopping List |
1 Tsp Salt+ Add to Shopping List |
1/2 Tsp Black Pepper+ Add to Shopping List |
2 Tbsp Olive Oil+ Add to Shopping List |
1 Cup Cherry Tomatoes, halved+ Add to Shopping List |
1 Cup Cucumber, chopped+ Add to Shopping List |
1/2 Cup Red Onion, thinly sliced+ Add to Shopping List |
12 Lettuce Cups+ Add to Shopping List |
- Make the Tzatziki Sauce (see ingredient list below). Add the Greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to a mixing bowl. Stir to combine. Taste and adjust seasoning as necessary. Cover and refrigerate until ready to use.
- Slice the chicken. Add the chicken, lemon juice, oregano, parsley, garlic powder, salt, pepper, and oil to a mixing bowl. Toss to coat.
- Heat a large skillet over medium heat. Add the seasoned chicken and cook for about 10 minutes, flipping halfway, or until cooked through. Remove from the heat.
- Assemble the lettuce wraps. Add a scoop of chicken to each lettuce cup. Top with tomatoes, cucumber, and red onion. Drizzle the tzatziki over the top. Enjoy!
