Greek Chicken Lettuce Wraps with Tzatziki Sauce

Ingredients:

+ Add All Ingredients to Shopping List
2 lbs Boneless Skinless Chicken Breasts, cut into 1-inch pieces+ Add to Shopping List
2 Tbsp Lemon Juice+ Add to Shopping List
2 Tsp Dried Oregano+ Add to Shopping List
2 Tsp Fresh Chopped Parsley+ Add to Shopping List
2 Tsp Garlic Powder+ Add to Shopping List
1 Tsp Salt+ Add to Shopping List
1/2 Tsp Black Pepper+ Add to Shopping List
2 Tbsp Olive Oil+ Add to Shopping List
1 Cup Cherry Tomatoes, halved+ Add to Shopping List
1 Cup Cucumber, chopped+ Add to Shopping List
1/2 Cup Red Onion, thinly sliced+ Add to Shopping List
12 Lettuce Cups+ Add to Shopping List
  1. Make the Tzatziki Sauce (see ingredient list below). Add the Greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to a mixing bowl. Stir to combine. Taste and adjust seasoning as necessary. Cover and refrigerate until ready to use.
  2. Slice the chicken. Add the chicken, lemon juice, oregano, parsley, garlic powder, salt, pepper, and oil to a mixing bowl. Toss to coat.
  3. Heat a large skillet over medium heat. Add the seasoned chicken and cook for about 10 minutes, flipping halfway, or until cooked through. Remove from the heat.
  4. Assemble the lettuce wraps. Add a scoop of chicken to each lettuce cup. Top with tomatoes, cucumber, and red onion. Drizzle the tzatziki over the top. Enjoy!
Tzatziki Sauce
1 Cup Plain Greek Yogurt+ Add to Shopping List
