Irish Boiled Dinner





Serves 8
Ingredients:
| 3 lbs corned beef brisket |
| 4 medium potatoes, peeled and quartered |
| 4 medium carrots, peeled and quartered |
| 8 small onions |
| 3 medium parsnips, peeled and cut in chunks |
| 2 medium rutabagas, peeled and cut in chunks |
| 1 small cabbage, cored and cut into wedges |
Directions:
- Put meat (with juice and spices) from packages into Dutch oven. Add enough water to cover meat.
- Bring to a boil, then reduce heat. Simmer, covered for about 2 hours until meat is almost tender.
- Add potatoes, onions, carrots, parsnips, and rutabagas. Cover pan and simmer for 15 minutes. Add cabbage to pan, cover and cook for 15-20 minutes more (until meat and vegetables are tender).
