Doritos Taco Salad

Ingredients:

1/4 Cup Red Wine Vinegar
1/4 Cup Olive Oil
2 Tbsp Ketchup
2 Tbsp Honey
1/2 Tsp Worcestershire Sauce
1/2 Tsp Paprika
1/4 Tsp Onion Powder
1/4 Tsp Garlic Powder
1 lb Ground Chicken (or Ground Beef)
1 Packet Taco Seasoning
16 oz Shredded Lettuce
1 Green Bell Pepper, diced
1 Cup Black Olives, sliced
2 Roma Tomatoes, diced
15 oz Can Corn, drained
15 oz Can Black Beans, drained and rinsed
1 Cup Shredded Cheese
2 Cups Nacho Cheese Doritos, crushed

Directions:

  1. Make the dressing. Add the red wine vinegar, olive oil, ketchup, honey, Worcestershire, paprika, onion powder, and garlic powder to a mason jar. Shake well. Refrigerate until ready to use. Can make up to 2 days in advance.
  2. Heat a large skillet over medium heat. Add the chicken and cook to completion. Add the taco seasoning and water (according to package instructions). Stir to combine. Bring to a boil then reduce the heat and simmer for about 5 minutes to let the chicken absorb the flavors. Remove from the heat and let cool for about 10 minutes.
  3. Divide the lettuce between 4-6 bowls. Top with green pepper, black olives, tomato, corn, black beans, and cheese to each bowl.
  4. Once cooled slightly, divide the chicken between the bowls. Top with crushed Doritos.
  5. Drizzle the dressing over the top of each bowl. Serve immediately.
  6. Add additional dressing, crushed Doritos, or other ingredients as needed, to taste. Enjoy!
