Grilled Quesadillas

Serves 4


Ingredients:

+ Add All Ingredients to Shopping List
1/2 cup grilled steak or grilled chicken+ Add to Shopping List
1 flour tortila+ Add to Shopping List
1/2 cup grated Spanish Manchego cheese+ Add to Shopping List
1/2 cup grated white cheddar or provolone cheese+ Add to Shopping List
1/4 cup green chilies, canned+ Add to Shopping List
1 tablespoon chopped fresh cilantro+ Add to Shopping List
1/4 cup chopped red bell peppers+ Add to Shopping List

Directions:

  1. Prepare grill on high heat, and have all ingredients ready and chopped. Mix together both cheeses in a bowl.
  2. On one half of tortilla sprinkle half of cheese mixture, then all of your meat and vegetables. Top with the rest of the cheese and fold over, pressing down to hold together. Brush sides of quesadilla with oil, place on hot grill, flipping over when one side is nice and brown.
  3. Make sure to cover grill in between so cheese melts.
