Wild Rice with Currants and Pine Nuts





Serves 8
Ingredients:
| 1 1/3 cup wild rice, (rinsed with cold water) |
| 11/2 cups water |
| 2 cups beef broth |
| 3/4 cup dried currants |
| 1/4 teaspoon fresh black pepper |
| 2 tablespoons butter |
| 1 teaspoon Festival Wild Rice Seasoning, or seasoned salt |
| 1 medium sweet onion, finely chopped |
| 1/2 cup pine nuts, toasted |
| Salt, to taste |
| Freshly ground pepper, to taste |
Directions:
- Combine beef broth and water into a large saucepan and bring to a boil. Add wild rice, currants, and pepper. Cover and simmer on low until moisture is absorbed (about 65-70 min).
- Meanwhile, toast the pine nuts in a skillet. Wipe out the skillet, melt the butter and sauté the onions until translucent and sprinkle with wild rice seasoning. When the wild rice is cooked combine all ingredients, season to taste, with salt and pepper and serve.
