Smashed Potatoes

Serves 6


Ingredients:

+ Add All Ingredients to Shopping List
8 large Red Potatoes, washed and dried+ Add to Shopping List
1 stick Salted Butter, softened and cut into Tablespoon size pieces+ Add to Shopping List
1/2 lb Our Own Smokehouse Bacon, cooked and roughly chopped+ Add to Shopping List
3 Green Onions, cleaned and sliced using the white and green Portions+ Add to Shopping List
French Fried Onions for Topping+ Add to Shopping List
3/4 cup Sour Cream+ Add to Shopping List
1 cup shredded Pepperjack Cheese+ Add to Shopping List
1/2 teaspoon Seasoned Salt (or more to taste)+ Add to Shopping List
1/4 teaspoon freshly Ground Black Pepper to taste+ Add to Shopping List
1/2 cup French Fried Onions+ Add to Shopping List
Green onions, cleaned and sliced for garnish+ Add to Shopping List

Directions:

  1. Bake potatoes in preheated oven at 350 degrees F until fork-tender (approximately 1 hour).
  2. Remove from oven.
  3. Place potatoes in a large bowl and smash with a potato masher.
  4. Immediately add softened butter, green onions, bacon, sour cream, shredded cheese and stir with a rubber spatula. Add salt and pepper. If you are serving right away, sprinkle on extra French fried onions and sliced green onions.
  5. If you want to hold and serve, put potatoes in an oven ready baking and serving dish. Hold in 350 degrees F oven for 20 minutes. Before serving, sprinkle top with extra French fried onions and sliced green onions.
