Pesto Penne Pasta

Serves 4


Ingredients:

1/2 lb penne rigato, dry
1/2 cup prepared basil pesto
1/4 cup half & half
1/2 cup grated Parmesan cheese
1/4 cup toasted pine nuts
1/2 cup chopped roasted red bell peppers
Ground parmesan, to taste

Directions:

  1. Cook pasta according to instructions in salted water, drain and place in bowl.
  2. While still hot, add pesto, cream, parmesan cheese and bell peppers. Mix until combined. Sprinkle pine nuts on top and serve. Can be served warm or cold!
