Rate this Recipe

1 lb Fresh Green Beans, washed and ends trimmed
4 Garlic Cloves, peeled and sliced into quarters
2 Tbsp Olive Oil
Salt & Pepper, for seasoning
Sprinkle of Sugar
1 Tsp Lemon Zest
2 Tsp Lemon Juice
1/2 Cup Dried Cranberries, plus more to taste
1/2 Cup Chopped Walnuts, plus more to taste

  1. Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil.
  2. Toss the green beans with garlic, olive oil, salt, pepper, and sugar. This can be done in a bowl or right on the baking sheet. Spread in a single layer on the baking sheet and roast for 10 minutes.
  3. Remove from the oven, toss the green beans, and bake for another 10 minutes. The beans should be tender and just starting to shrivel.
  4. Add the lemon zest, lemon juice, cranberries and walnuts. Toss to combine. Add additional salt, pepper, and lemon juice to taste. Serve warm.
