Edible Cookie Dough Chow

Ingredients:

6 Cups Rice Chex Cereal
1 Cup Milk Chocolate Chips
3/4 Cup Cookie Butter
1 Tsp Vanilla Extract
6 Tbsp Unsalted Butter
1 1/2 Cups Powdered Sugar
1 Batch Edible Cookie Dough, see ingredient list below
  1. Make the edible cookie dough (see ingredient list below). Add the butter, light brown sugar, and sugar to the bowl of a stand mixer. Beat on medium speed until light and fluffy.
  2. Add the vanilla and mix until combined.
  3. Add the flour and salt and mix until combined.
  4. Add the milk and mix until combined.
  5. Add the chocolate chips and mix until combined. Set aside.
  6. Make the chow. Place the cereal in a large mixing bowl.
  7. Add the chocolate chips, cookie butter, vanilla, and unsalted butter to a microwave safe bowl. Heat in 30 second increments, stirring in between, until completely melted. Pour over the cereal and stir to coat.
  8. Add the powdered sugar and stir to coat.
  9. Crumble the cookie dough into very small pieces and add to the cereal. Stir to combine.
  10. Pour onto a baking sheet or piece of wax paper on the counter. Spread into an even layer. Let sit for about 15 minutes to allow the chocolate to set.
  11. Enjoy immediately or store in an airtight container in the fridge.
Edible Cookie Dough
6 Tbsp Unsalted Butter, softened
1/2 Cup Light Brown Sugar, packed
1/4 Cup Sugar
2 Tsp Vanilla Extract
1 Cup Flour
1/4 Tsp Salt
2 Tbsp Milk
1/2 Cup Mini Chocolate Chips
