Cajun Rice

Ingredients:

5 Tbsp Unsalted Butter
1/2 Red Bell Pepper, diced
1/2 Green Bell Pepper, diced
1/2 Yellow Onion, diced
3 1/4 Cups Low Sodium Chicken or Vegetable Broth
1 1/4 Tsp Salt
1 Tsp Garlic Powder
1/2 Tsp Dried Thyme
1 Tsp Paprika
1/4 Tsp Black Pepper
1 Bay Leaf
1 1/2 Cups Basmati White Rice

Directions:

  1. Add the butter to a large saucepan and melt over medium-high heat.
  2. Add the diced peppers and onion and stir to combine. Sauté for 3-4 minutes or until softened.
  3. Add the broth, salt, garlic powder, thyme, paprika, pepper, and bay leaf. Stir to combine. Bring to a boil.
  4. Add the rice and stir to combine. Cover with a lid and reduce the heat to simmer. Simmer for 15-20 minutes or until the rice is cooked through.
  5. Remove the cover and fluff the rice with a fork. Serve immediately while still warm. Enjoy!
