Instant Pot Cajun Chicken with Rice





Ingredients:
+ Add All Ingredients to Shopping List
1 lb Boneless Skinless Chicken Breast, cut into 1-inch pieces+ Add to Shopping List |
2 Tbsp Cajun Seasoning, divided+ Add to Shopping List |
1 Tbsp Avocado Oil+ Add to Shopping List |
1 White Onion, diced+ Add to Shopping List |
3 Garlic Cloves, minced+ Add to Shopping List |
1 1/2 Cups White Rice (Not Instant), uncooked+ Add to Shopping List |
2 Bell Peppers, chopped+ Add to Shopping List |
2 Tbsp Tomato Paste+ Add to Shopping List |
1 3/4 Cups Low Sodium Chicken Broth+ Add to Shopping List |
Directions:
- Chop the onion and bell peppers. Mince the garlic. Slice the chicken.
- Place the chicken in a bowl. Sprinkle with 1 Tbsp Cajun Seasoning. Toss to coat.
- Add avocado oil to the bowl of the Instant Pot and heat on the SAUTE setting. Add the onion and garlic and cook until translucent, about 5 minutes. Turn off the Instant Pot.
- Add the bell peppers, tomato paste, and 1 Tbsp Cajun Seasoning. Stir to combine.
- Pour in the chicken broth and gently place the chicken on top.
- Add the rice on top of the chicken. Do not stir!
- Close the lid and make sure the valve is in the sealed position. Manually cook on HIGH pressure for 8 minutes.
- Naturally release pressure for 5 minutes then open the valve to the venting setting and quick release the rest of the pressure. Turn off the Instant Pot.
- Stir all ingredients to combine. Taste and additional seasoning, if necessary. Serve immediately.
