Instant Pot Cajun Chicken with Rice

Ingredients:
1 lb Boneless Skinless Chicken Breast, cut into 1-inch pieces
2 Tbsp Cajun Seasoning, divided
1 Tbsp Avocado Oil
1 White Onion, diced
3 Garlic Cloves, minced
1 1/2 Cups White Rice (Not Instant), uncooked
2 Bell Peppers, chopped
2 Tbsp Tomato Paste
1 3/4 Cups Low Sodium Chicken Broth
Directions:
Chop the onion and bell peppers. Mince the garlic. Slice the chicken.
Place the chicken in a bowl. Sprinkle with 1 Tbsp Cajun Seasoning. Toss to coat.
Add avocado oil to the bowl of the Instant Pot and heat on the SAUTE setting. Add the onion and garlic and cook until translucent, about 5 minutes. Turn off the Instant Pot.
Add the bell peppers, tomato paste, and 1 Tbsp Cajun Seasoning. Stir to combine.
Pour in the chicken broth and gently place the chicken on top.
Add the rice on top of the chicken. Do not stir!
Close the lid and make sure the valve is in the sealed position. Manually cook on HIGH pressure for 8 minutes.
Naturally release pressure for 5 minutes then open the valve to the venting setting and quick release the rest of the pressure. Turn off the Instant Pot.
Stir all ingredients to combine. Taste and additional seasoning, if necessary. Serve immediately.
