Heat oil in a large skillet over medium-high heat. Cut the wonton wrappers in half, diagonally. Once the oil is hot, add 6-8 wonton wrappers and fry for about 30 seconds, flipping halfway. Remove to a paper towel lined baking sheet to absorb the excess oil. Continue until all wonton wrappers have been fried.
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
Assemble the nachos by lining the bottom of the baking sheet with the crispy wontons. Top with the shredded cheese then layer on the pork sausage / plant-based meat. Top with the pepperoni and banana peppers.
Bake for 5-7 minutes or until the cheese has melted. Serve warm with marinara sauce on the side for dipping. Sprinkle the top with parmesan cheese (optional) before serving. Enjoy!
