Pepperjack Baked Eggs Breakfast Sandwich





Ingredients:
| 1 Tbsp Butter, softened |
| 6 Eggs, beaten |
| 8 oz Pepperjack Cheese, shredded |
| 8 oz Cottage Cheese |
| 1/4 Cup Flour |
| 1 Tsp Salt |
| Meat of Choice - sausage patties, canadian bacon, bacon, etc. |
| Sliced Cheddar or Pepperjack Cheese |
| Bread of Choice - english muffins, croissants, biscuits, etc. |
Directions:
- Preheat oven to 400 degrees F. Use your fingers to rub the softened butter all over the inside of an 8x8 baking dish.
- Whisk the eggs. Add the pepperjack cheese, cottage cheese, flour, and salt. Stir to combine. Pour into the baking dish.
- Bake for 35-40 minutes or until the eggs are completely set.
- While the eggs are baking, prepare your meat of choice, according to package instructions. Set aside.
- Remove the eggs from the oven and use a cookie cutter or biscuit cutter to cut the eggs into circles.
- Assemble the sandwiches. Place the cheese on the bottom half of the bread, add the meat, then one of the egg rounds, and top with the other piece of bread.
- Serve immediately while still hot and enjoy! You should have enough eggs for 5-6 sandwiches.
- *** You can double the recipe of the egg bake and use a 9x13 baking dish. Reduce the oven temperature to 350 degrees F and increase the bake time to 45-50 minutes. Doubling the recipe should provide enough eggs for 8-9 sandwiches.
