4 tablespoons goat cheese, (or more - some people like a bigger sandwich!)
1/2 cup arugula leaves
Olive oil, butter or nonstick spray
Directions:
Divide jam, cheese, prosciutto, and arugula between the two sandwiches.
Preheat skillet. Toast both sides of bread slices until golden brown.
Flip 1 side of toasted bread on baking sheet. Top each with 1 tablespoon fig jam, prosciutto, goat cheese and finish with a 1 tablespoon more of fig spread. Add 1 slice of bread on top of the layered slice.

Place under broiler until cheese melts.
