Ciabatta Melts with Chicken, Bacon & Pepper Jack

Ingredients:
Ciabatta Bread
1-2 Boneless Skinless Chicken Breasts
1 Red Bell Pepper, sliced
1 Small White Onion, sliced
4 Slices Pepper Jack Cheese
4 Strips of Bacon, cooked
Mayonnaise
Salt & Black Pepper
Directions:
Cook the bacon according to package instructions. Remove to a paper towel lined plate to drain the grease and set aside.
Bake the ciabatta according to package instructions. Set aside to cool.
Season both sides of the chicken with salt and pepper. Use a grill or grill pan to cook on each side for 7-8 minutes or until cooked through and an internal temperature of 165 degrees F is reached.
While the chicken is cooking, slice the bell pepper and onion. Use a nonstick pan to cook the vegetables over low heat until soft, about 7-8 minutes.
Slice the ciabatta in half, both across and lengthwise, to create 2 sandwiches. If you double the recipe and use a full loaf of ciabatta to create 4 sandwiches, if needed. Spread mayo on each slice.
Add one slice of pepper jack cheese to each piece of bread, using 2 slices per sandwich. Fold/break the cheese to fit on the bread. Place in a 250-degree F oven for about 5 minutes. This will melt the cheese and re-warm the bread.
Top each with 2 slices of bacon, 1 piece of chicken, a scoop of cooked vegetables. Add the top half of the bread. Serve warm and enjoy!
