Grilled Cheese & Bacon Stuffed Mini Bell Peppers





Ingredients:
| 24 Mini Bell Peppers |
| 8 oz Cream Cheese, softened |
| 5-6 Strips of Bacon, cooked and chopped |
| 1 Cup Shredded Cheddar Cheese |
| 1/3 Cup Mayonnaise |
Directions:
- Preheat the grill to 350 degrees F.
- Remove the tops from the bell peppers. Carefully core out the inside and remove any seeds. Set aside.
- Cook the bacon according to package instructions. Remove to a paper towel lined plate to drain excess grease. Let cool then chop.
- Add the cream cheese, bacon, shredded cheese, and mayo to a mixing bowl and stir until well combined. Add the mixture to the inside of each bell pepper (a piping bag works well). Make sure to stuff each pepper until full. Place the peppers on a grilling rack. If the peppers are too thin and fall through, use toothpicks to hold them in place.
- Place the grill rack on the grill and cook for 10-12 minutes or until the peppers are soft and tender and the mixture is melted and warmed through. It’s best to keep the grill cover closed while cooking but do check on the peppers every few minutes to prevent burning.
- Carefully remove the grill rack from the grill and transfer the peppers to a serving platter. Serve immediately while warm. Enjoy!
