Ingredients:
| 1 Box Near East Original Couscous |
| 2 Cups Broth, Stock, or Water |
| Olive Oil |
| 2 Tomatoes, chopped |
| 3 Garlic Cloves, minced |
| 5 oz Pesto |
| 1 Cup Mozzarella |
| Grated Parmesan, for topping |
| Fresh Chopped Basil, for topping |
Directions:
- Chop the tomatoes and basil. Mince the garlic.
- Prepare the entire box of couscous, according to package instructions. Set side.
- Heat oil in a large saucepan over medium heat. Add the tomatoes and garlic and cook until the tomatoes are cooked and release most of their juices.
- Add to the couscous and stir to combine.
- Add the pesto and mozzarella and stir to combine. Continue to heat until the mozzarella is melted.
- Serve warm, garnished with parmesan cheese and fresh chopped basil. Enjoy!
- Add additional pesto if needed and tore any leftover in an airtight container in the fridge.
