Air Fryer Garlic Parmesan Chicken Skewers

Ingredients:

1 lb Boneless Skinless Chicken Breasts
2 Tbsp Olive Oil
1 Stick Unsalted Butter
10 Garlic Cloves, minced
1/2 Cup Grated Parmesan, plus more for topping
2 Tbsp Frank's Hot Sauce
2 Tsp Red Pepper Flakes
1/3 Cup Fresh Parsley, chopped, plus more for topping
2 Tsp Paprika
1 Tsp Garlic Powder
1 Tsp Onion Powder
1/2 Tsp Salt
1/2 Tsp Black Pepper
6 8-inch Wooden Skewers

Directions:

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Cut the chicken into 2-inch pieces and place in a Ziploc bag. Drizzle with olive oil and toss to coat.
  3. In a small bowl, combine the paprika, garlic powder, onion powder, salt, and pepper. Add to the chicken. Seal the bag and shake to coat the chicken.
  4. Thread the chicken onto the skewers, leaving no space between each piece of chicken. Set aside.
  5. Melt the butter in a saucepan over low heat. Add the garlic, red pepper flakes, hot sauce, and parmesan. Whisk to combine and cook until fragrant, about 2 minutes. Remove from the heat, add the parsley, and stir to combine.
  6. Divide the sauce in ½. One half will be used to baste the chicken while it cooks. The other half will be used to top the chicken before serving.
  7. Spray the air fryer basket with cooking spray. Add 3 skewers. Air fry at 400 degrees F for 5 minutes. Flip the skewers. Baste the skewers and air fry at 400 degrees F for an additional 2 minutes. Flip the skewers again and baste again. Air fry for another 5 minutes. If needed, cook for an additional 1-2 minutes or until the internal temperature reaches 165 degrees F. Remove to a clean plate and set aside.
  8. Repeat with the other 3 skewers.
  9. Once finished, drizzle the remaining sauce over the top. Garnish with grated parmesan cheese and chopped parsley. Serve immediately and enjoy!
