Air Fryer Lemon Pepper Chicken Skewers

Ingredients:
Chicken Ingredients
1 lb Boneless Skinless Chicken Breasts
1 Tsp Salt
1 Tsp Black Pepper
3-4 Garlic Cloves, minced
2 Tbsp Lemon Zest
2 Tbsp Olive Oil
6 8-Inch Wooden Skewers
Lemon Pepper Butter Ingredients
1 Stick Unsalted Butter, melted
1 Tsp Salt
1 Tsp Black Pepper
1/2 Tsp Paprika
Juice from 1 Lemon
1 Tbsp Lemon Zest
Directions:
Soak wooden skewers in water for at least 30 minutes.
Cut the chicken into 2-inch pieces and place in a Ziploc bag. Add the salt, pepper, garlic, lemon zest, and olive oil. Seal the bag and toss to coat.
Refrigerate for 30 minutes to marinate the chicken.
Thread the chicken onto the skewers, leaving no space between each piece of chicken. Set aside.
Melt the butter in a microwave safe bowl. Add the salt, pepper, paprika, lemon juice, and lemon zest. Whisk to combine.
Divide the sauce in ½. One half will be used to baste the chicken while it cooks. The other half will be used to top the chicken before serving.
Spray the air fryer basket with cooking spray. Add 3 skewers. Air fry at 400 degrees F for 5 minutes. Flip the skewers. Baste the skewers and air fry at 400 degrees F for an additional 2 minutes. Flip the skewers again and baste again. Air fry for another 5 minutes. If needed, cook for an additional 1-2 minutes or until the internal temperature reaches 165 degrees F. Remove to a clean plate and set aside.
Repeat with the other 3 skewers.
Once finished, brush the remaining sauce over the top. Serve immediately and enjoy!
