Easy Taco Skillet

Ingredients:

2 Tbsp Olive Oil
1 Red Bell Pepper, chopped
1/3 Cup Sliced Green Onions, plus more for garnish
2 Large Garlic Cloves, minced
1 Tbsp Chili Powder
1 Tbsp Ground Cumin
1 Tsp Salt
1 lb Ground Beef
15 oz Can Diced Tomatoes, undrained
1 Cup Black Beans, drained and rinsed
1 1/2 Tbsp Frank's Hot Sauce, use more or less to taste
1 Cup Monterey Jack Cheese, shredded
1 Cup Cheddar Cheese, shredded
Tortilla Chips or Fritos Scoops, for serving, optional

Directions:

  1. Prepare the ingredients. Chop the bell pepper and green onion, mince the garlic. Drain and rinse the black beans. Set all ingredients aside.
  2. Heat oil in a large skillet over medium heat. Add the bell pepper and green onion and cook until soft, about 4-5 minutes. Add the garlic, stir to combine, and continue to cook until fragrant, about 30 seconds.
  3. Add the chili powder, cumin, and salt, and stir to combine.
  4. Add the ground beef and cook until no longer pink, about 5 minutes, making sure to crumble as it cooks.
  5. Add the black beans and stir to combine. Continue to heat for 2-3 minutes to warm the beans.
  6. Add the entire can of diced tomatoes (including the juice) and the hot sauce and stir to combine. Continue to heat for 2-3 minutes to warm the tomatoes through.
  7. ***If you like less heat, only use ½ - 1 Tbsp of hot sauce. If you like more heat, add 1 ½ - 2 Tbsp hot sauce. You can always add more while eating if you want more heat.
  8. Add the Monterey jack and cheddar cheese and stir to combine. Cover and let melt for about 2 minutes.
  9. Remove the cover and remove from the heat. Garnish with additional green onions.
  10. Serve immediately while hot and enjoy! Eat as is or use tortilla chips or Frito Scoops to scoop the mixture.
