Ingredients:

2 Tbsp Olive Oil+ Add to Shopping List |
1 Red Bell Pepper, chopped+ Add to Shopping List |
1/3 Cup Sliced Green Onions, plus more for garnish+ Add to Shopping List |
2 Large Garlic Cloves, minced+ Add to Shopping List |
1 Tbsp Chili Powder+ Add to Shopping List |
1 Tbsp Ground Cumin+ Add to Shopping List |
1 Tsp Salt+ Add to Shopping List |
1 lb Ground Beef+ Add to Shopping List |
15 oz Can Diced Tomatoes, undrained+ Add to Shopping List |
1 Cup Black Beans, drained and rinsed+ Add to Shopping List |
1 1/2 Tbsp Frank's Hot Sauce, use more or less to taste+ Add to Shopping List |
1 Cup Monterey Jack Cheese, shredded+ Add to Shopping List |
1 Cup Cheddar Cheese, shredded+ Add to Shopping List |
Tortilla Chips or Fritos Scoops, for serving, optional+ Add to Shopping List |
Directions:
- Prepare the ingredients. Chop the bell pepper and green onion, mince the garlic. Drain and rinse the black beans. Set all ingredients aside.
- Heat oil in a large skillet over medium heat. Add the bell pepper and green onion and cook until soft, about 4-5 minutes. Add the garlic, stir to combine, and continue to cook until fragrant, about 30 seconds.
- Add the chili powder, cumin, and salt, and stir to combine.
- Add the ground beef and cook until no longer pink, about 5 minutes, making sure to crumble as it cooks.
- Add the black beans and stir to combine. Continue to heat for 2-3 minutes to warm the beans.
- Add the entire can of diced tomatoes (including the juice) and the hot sauce and stir to combine. Continue to heat for 2-3 minutes to warm the tomatoes through.
- ***If you like less heat, only use ½ - 1 Tbsp of hot sauce. If you like more heat, add 1 ½ - 2 Tbsp hot sauce. You can always add more while eating if you want more heat.
- Add the Monterey jack and cheddar cheese and stir to combine. Cover and let melt for about 2 minutes.
- Remove the cover and remove from the heat. Garnish with additional green onions.
- Serve immediately while hot and enjoy! Eat as is or use tortilla chips or Frito Scoops to scoop the mixture.
