Classic Cowboy Casserole

Ingredients:

10 oz Frozen Corn Kernels, thawed+ Add to Shopping List
1 Medium Yellow Onion, chopped+ Add to Shopping List
3 Garlic Cloves, minced+ Add to Shopping List
8 oz Cheddar Cheese, shredded+ Add to Shopping List
15 oz Can Black Beans, drained and rinsed+ Add to Shopping List
Olive Oil+ Add to Shopping List
1 lb Ground Beef+ Add to Shopping List
1 Tsp Salt+ Add to Shopping List
1/4 Tsp Black Pepper+ Add to Shopping List
1 Packet Taco Seasoning+ Add to Shopping List
14.5 oz Can Fire Roasted Diced Tomatoes, undrained+ Add to Shopping List
8 oz Sour Cream+ Add to Shopping List
32 oz Frozen Tater Tots+ Add to Shopping List
Green Onions, sliced, for garnish+ Add to Shopping List

Directions:

  1. Prepare your ingredients. Thaw the corn, chop the onion, mince the garlic, drain and rinse the black beans, and slice the green onions. Set all ingredients aside.
  2. Preheat oven to 400 degrees F and spray a 9x13 baking pan with cooking spray.
  3. Heat oil in a large skillet over medium heat. Add the ground beef, salt, and pepper. Cook until completely cooked through, crumbling as it cooks, about 7-8 minutes.
  4. Add the onion, garlic, and taco seasoning. Stir to combine and continue to cook until the onions are soft, about 5 minutes.
  5. Turn off the heat and stir in the entire can of fire-roasted diced tomatoes (including the juice from the can) and the sour cream. Pour into the prepared 9x13 baking pan and spread into an even layer.
  6. Sprinkle the black beans and corn evenly over the top. Add 2/3 of the cheese evenly over the top.
  7. Arrange the entire bag of tater tots over the top, making tight rows.
  8. Bake for 35-40 minutes or until the tater tots are golden brown and crisp and the casserole is bubbling. Remove from the oven and sprinkle the remaining cheese over the top. Return to the oven to melt the cheese, 2-3 minutes.
  9. Serve immediately while hot and enjoy!
  10. Any leftovers should be cooled completely and stored in an airtight container in the fridge.
