Ciabatta Breakfast Sandwich





Serves 4
Ingredients:
+ Add All Ingredients to Shopping List
4 Ciabatta Rolls+ Add to Shopping List |
6 Large Eggs+ Add to Shopping List |
1/4 Cup Half & Half+ Add to Shopping List |
Salt & Pepper, to taste+ Add to Shopping List |
2 Tbsp Butter+ Add to Shopping List |
8 Slices Bacon, cooked+ Add to Shopping List |
8 Slices Gouda Cheese or 4oz Shredded Gouda Cheese+ Add to Shopping List |
Directions:
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Place the ciabatta rolls on the baking sheet and bake according to package instructions. Remove from the oven and let cool slightly. Once cool enough to touch, slice in half, and lay open-faced on the baking sheet. Leave the oven on.
- Cook the bacon according to package instructions. Remove to a paper towel lined plate and set aside to drain the excess grease.
- Crack the eggs in a bowl. Add the half & half and whisk to combine. Season with salt and pepper, to taste.
- Melt the butter in a skillet over medium-low heat. Add the egg mixture and cook, stirring occasionally, until cooked through.
- Place one slice of cheese on each piece of ciabatta (or divide the shredded cheese evenly between the ciabatta). Return the baking sheet to the oven for 2-3 minutes to allow the cheese to melt.
- Assemble the sandwiches. Cut the bacon in half and place 4 pieces (2 full pieces of bacon) on half of the ciabatta. Divide the eggs evenly between the ciabatta, on top of the bacon. Place the top half of each ciabatta on top.
- Serve immediately while still hot and enjoy!
