Combine the peaches, sugar, 2 Tbsp flour, cornstarch, 1 tsp cinnamon, and salt in a large mixing bowl. Pour into the baking dish and set aside.
In a separate mixing bowl, combine the brown sugar, remaining flour, butter, and remaining cinnamon until it forms a wet mixture. Add the oats and mix again. The mixture will be coarse. It works well to mix with your hands.
Crumble the mixture on top of the peaches in an even layer. Bake for 20-25 minutes, until the oats start to turn a golden-brown color, and the edges start to crisp. Remove from the oven and let rest to set up.
