Grilled Peach Sandwich with Prosciutto and Arugula

Ingredients:
1 French Baguette
1 Ripe Peach, pitted and sliced into 8 pieces
Olive Oil
2 Cups Arugula
Salt
Black Pepper
3 oz Prosciutto
Fresh Sliced Mozzarella or Burrata
Balsamic Glaze
Directions:
Bake the baguette according to package instructions. Set aside to cool then slice in half to create 2 sandwiches. Slice each in half, lengthwise.
Slice the peach and add to a bowl. Add 1 tsp olive oil and toss to coat.
Heat a grill pan over medium-high heat. Lightly brush with oil or spray with cooking spray. Add the peach slices and grill on each side for about 2 minutes or until grill marks appear. Remove to a plate.
Brush the bread with oil then place face down on the grill to toast the bread.
Add the arugula to a bowl with 1 tsp olive oil and a pinch of salt and pepper. Set aside.
Assemble the sandwiches. Evenly divide the prosciutto between each sandwich. Top with sliced mozzarella (or use burrata), drizzle with balsamic glaze, add the peaches, and top with a heap of arugula. Add the top half of the bread.
