Grilled Peach Sandwich with Prosciutto and Arugula





Ingredients:
| 1 French Baguette |
| 1 Ripe Peach, pitted and sliced into 8 pieces |
| Olive Oil |
| 2 Cups Arugula |
| Salt |
| Black Pepper |
| 3 oz Prosciutto |
| Fresh Sliced Mozzarella or Burrata |
| Balsamic Glaze |
Directions:
- Bake the baguette according to package instructions. Set aside to cool then slice in half to create 2 sandwiches. Slice each in half, lengthwise.
- Slice the peach and add to a bowl. Add 1 tsp olive oil and toss to coat.
- Heat a grill pan over medium-high heat. Lightly brush with oil or spray with cooking spray. Add the peach slices and grill on each side for about 2 minutes or until grill marks appear. Remove to a plate.
- Brush the bread with oil then place face down on the grill to toast the bread.
- Add the arugula to a bowl with 1 tsp olive oil and a pinch of salt and pepper. Set aside.
- Assemble the sandwiches. Evenly divide the prosciutto between each sandwich. Top with sliced mozzarella (or use burrata), drizzle with balsamic glaze, add the peaches, and top with a heap of arugula. Add the top half of the bread.
- Slice each sandwich in half, serve, and enjoy!
