Ingredients:

Cream Cheese Frosting Ingredients+ Add to Shopping List |
3 oz Cream Cheese, softened+ Add to Shopping List |
6 Tbsp Unsalted Butter, softened+ Add to Shopping List |
2 1/2 Cups Powdered Sugar+ Add to Shopping List |
1 Tsp Vanilla Extract+ Add to Shopping List |
1 Tbsp Milk, plus more as needed+ Add to Shopping List |
Directions:
- Preheat oven to 350 degrees F. Grease an 11x17 baking pan (jelly roll size).
- Add the eggs and sugar to the bowl of a stand mixer. Beat until well combined and fluffy.
- Add the pumpkin and oil and beat until well combined.
- In a separate mixing bowl, combine the dry ingredients, flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
- Slowly pour the dry ingredients into the wet ingredients with the mixer on low speed and continue to mix until incorporated. Do not overmix.
- Pour onto the greased baking pan and spread to the sides. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely.
- Make the cream cheese frosting. Add the cream cheese and butter to the bowl of a stand mixer and beat until well combined. Add the milk and vanilla and beat again. Add the powdered sugar, one cup at a time and beat again, until well combined and smooth. Add additional milk as needed to help smooth out the frosting and reach the desired consistency, about 1 Tsp at a time.
- Once the frosting is to your liking, spread evenly over the bars. Slice, serve and enjoy!
