Frosted Pumpkin Bars

Ingredients:

15 oz Can Pure Pumpkin (not pie filling)+ Add to Shopping List
1 Cup Vegetable Oil+ Add to Shopping List
2 Cups Flour+ Add to Shopping List
2 Tsp Baking Powder+ Add to Shopping List
1 Tsp Baking Soda+ Add to Shopping List
1/2 Tsp Salt+ Add to Shopping List
1 Tsp Cinnamon+ Add to Shopping List
1/2 Tsp Pumpkin Pie Spice+ Add to Shopping List
Cream Cheese Frosting Ingredients+ Add to Shopping List
3 oz Cream Cheese, softened+ Add to Shopping List
6 Tbsp Unsalted Butter, softened+ Add to Shopping List
2 1/2 Cups Powdered Sugar+ Add to Shopping List
1 Tsp Vanilla Extract+ Add to Shopping List
1 Tbsp Milk, plus more as needed+ Add to Shopping List

Directions:

  1. Preheat oven to 350 degrees F. Grease an 11x17 baking pan (jelly roll size).
  2. Add the eggs and sugar to the bowl of a stand mixer. Beat until well combined and fluffy.
  3. Add the pumpkin and oil and beat until well combined.
  4. In a separate mixing bowl, combine the dry ingredients, flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
  5. Slowly pour the dry ingredients into the wet ingredients with the mixer on low speed and continue to mix until incorporated. Do not overmix.
  6. Pour onto the greased baking pan and spread to the sides. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely.
  7. Make the cream cheese frosting. Add the cream cheese and butter to the bowl of a stand mixer and beat until well combined. Add the milk and vanilla and beat again. Add the powdered sugar, one cup at a time and beat again, until well combined and smooth. Add additional milk as needed to help smooth out the frosting and reach the desired consistency, about 1 Tsp at a time.
  8. Once the frosting is to your liking, spread evenly over the bars. Slice, serve and enjoy!
