Ingredients:
| CARAMELIZED ONION INGREDIENTS |
| 2 Tbsp Unsalted Butter |
| 2 Large Onions, sliced into half moons |
| Salt |
| 2-3 Sprigs of Thyme |
| 1/3 Cup Dry White Wine |
| SANDWICH INGREDIENTS |
| 4 Slices Thick Sourdough Bread |
| Mayonnaise |
| Black Pepper |
| 2 Tsp Fresh Thyme Leaves |
| 4 Slices Gruyere Cheese |
Directions:
- Start by caramelizing the onions. Melt the butter in a large skillet over medium-low heat. Add the onions and season with salt. Cook, stirring occasionally, until the onions start to turn golden brown, about 40-45 minutes.
- Add the thyme and wine. Stir to combine and let the wine reduce for 1-2 minutes.
- Prepare the sandwiches. Spread mayonnaise on one side of each piece of bread. Place 2 slices of bread on a skillet, mayonnaise side down. Evenly divide the onions between each. Season with black pepper and sprinkle thyme on top of each. Arrange 2 slices of gruyere cheese on top of each slice of bread. Place the remaining slices of bread on top, mayonnaise side up.
- Heat the skillet over medium-low heat. Let the sandwiches cook for 3-4 minutes then flip and cook for 3-4 minutes on the other side. The bread should be golden brown and crispy. If the cheese isn’t entirely melted, warm the sandwiches in the microwave for 20-30 seconds.
- Slice in half, serve, and enjoy!
