Use a vegetable peel to peel the apple then core the center. Use a mandolin or knife to slice into very thin slices.
Melt the butter in a bowl. Whisk in the brown sugar and cinnamon.
Dip each piece of apple into the mixture then stack in the ramekin. The apple sliced should stack to the top of the ramekin if not slightly higher. Discard any remaining liquid.
Bake for 10 minutes.
Carefully drain any liquid from the ramekin. Place the piece of puff pastry on top and brush with the egg wash.
Bake for an additional 20 minutes. Let cool on the counter for about 10-15 minutes.
Loosed the edges and invert the tart onto a plate. Serve with a scoop of vanilla ice cream and enjoy!
