Smoked Pulled Chicken with Maple BBQ Sauce

Ingredients:

1/2 Cup Brown Sugar
4 Tbsp Garlic Powder
4 Tsp Paprika
4 Tsp Onion Powder
2 Tsp Chili Powder
2 Tsp Salt
1 Tsp Black Pepper
4-5 lbs Chicken Thighs or Boneless Skinless Chicken Breasts
1 Cup BBQ Sauce
1/4 Cup Maple Syrup
Hamburger Buns
Toppings of your choice; cheese, sliced onion, coleslaw, etc.

Directions:

  1. Preheat the smoker to 275 degrees F with hickory wood chips (or any flavor of choice).
  2. Combine the brown sugar, garlic powder, paprika, onion powder, chili powder, salt, and black pepper in a Ziploc bag. Add the chicken, seal and toss to coat. Work in batches if needed.
  3. Transfer to a foil pan or multiple pans, depending on what will fit in your smoker. Keep the chicken in an even layer, do not stack.
  4. Insert a thermometer and smoke for 45-60 minutes. Combine the BBQ sauce and maple syrup in a small bowl and place in the smoker to warm while the chicken finishes smoking. It could take up to 2 hours total to smoke the chicken, depending on the outside elements, the smoker temperature, etc.
  5. Remove the chicken and cover with foil for about 10 minutes then transfer to a cutting board and shred. Return the chicken to the foil pan and pour the BBQ/syrup mixture over the top. Stir to coat.
  6. Return to the smoker for 15-20 minutes.
  7. To serve, enjoy as is or on hamburger buns with any toppings of your choice; cheese, sliced onion, coleslaw, lettuce, etc.
