Pesto Eggs on Toast

Ingredients:

4 Slices of Bread
Butter
1/2 Cup Pesto, store-bought or homemade
4 Eggs
Grated Parmesan Cheese, optional, for garnish

Directions:

  1. Butter both sides of each piece of bread. Heat a griddle pan over medium heat, add the bread, and toast on each side.
  2. Add the pesto to a large skillet over medium heat. Once the pan is hot, crack the eggs on top of the pesto. Cover and let cook until the eggs are the desired doneness.
  3. Transfer the toast to plates and top each with one egg. The bottom of each egg will be nicely coated in pesto.
  4. Sprinkle a little parmesan over the top before serving. Enjoy!
