Ingredients:
| 4 Slices of Bread |
| Butter |
| 1/2 Cup Pesto, store-bought or homemade |
| 4 Eggs |
| Grated Parmesan Cheese, optional, for garnish |
Directions:
- Butter both sides of each piece of bread. Heat a griddle pan over medium heat, add the bread, and toast on each side.
- Add the pesto to a large skillet over medium heat. Once the pan is hot, crack the eggs on top of the pesto. Cover and let cook until the eggs are the desired doneness.
- Transfer the toast to plates and top each with one egg. The bottom of each egg will be nicely coated in pesto.
- Sprinkle a little parmesan over the top before serving. Enjoy!
