Herb Chicken Skillet with Spinach and Tomatoes





Ingredients:
| Olive Oil |
| 1 lb Chicken Tenders or Chicken Breasts |
| 1 Medium Onion, chopped |
| 14.5 oz Can Diced Tomatoes, undrained |
| 1 Tsp Basil Leaves (seasoning) |
| 1/2 Tsp Garlic Powder |
| 1/2 Tsp Oregano Leaves |
| 1/2 Tsp Salt |
| 1/2 Tsp Black Pepper |
| 5 oz Package Baby Spinach |
| Grated Parmesan Cheese, optional, for garnish |
Directions:
- Heat oil in a large skillet over medium heat. Add chicken tenders and cook on each side for 4-5 minutes or until the internal temperature is 165 degrees F.
- Add the onion and cook until softened.
- Stir in the can of tomatoes (undrained) and seasonings. Bring to a boil then cover and reduce the heat to simmer for 5-7 minutes.
- Stir in spinach and cook until it begins to wilt.
- When ready to plate, sprinkle grated parmesan over the top, optional. Enjoy!
