Preheat the oven to 375 degrees F and spray a muffin tin with cooking spray.
Unroll the crescent dough on a lightly floured surface. Separate into 4 rectangles and pinch together any perforated edges (keep 2 triangles together to form a rectangle).
Use a pizza cutter to cut each rectangle into 3 1-inch-wide strips, lengthwise.
Spread a thin layer of sauce on each.
Sprinkle with mozzarella and parmesan cheese.
Place pepperoni halves on the top half of each strip, slightly overlapping, and hanging off the dough.
Tightly roll, being careful to keep the pepperoni from falling out.
Place each in the prepared muffin tin. Sprinkle Italian seasoning over the top.
Bake for 10-15 minutes or until golden brown.
Serve warm with additional pizza sauce on the side for dipping. Sprinkle additional parmesan cheese on top, optional. Enjoy!
