Frozen Watermelon Mojito

Ingredients:

12 Mint Leaves
1/4 Cup Sugar
1/4 Cup Water
3 Cups Seedless Watermelon, cubed
Juice of 2 Limes
3 oz White Rum

Directions:

  1. Prepare the mint simple syrup. Add the water, sugar, and mint to a small saucepan and heat over medium heat. Bring to a boil, stirring to dissolve the sugar. Cook for about 1 minute then remove from the heat and let cool (keep the mint leaves in the saucepan while it cools). Place a fine mesh strainer over a bowl and pour in the syrup. Discard the mint leaves. Transfer the simple syrup to an airtight container and refrigerate until ready to use.
  2. Cube the watermelon and place on a baking sheet in a single layer. Place in the freezer for at least 2 hours, if not longer. Keep in freezer until ready to use.
  3. Prepare the mojitos. Add the frozen watermelon, lime juice, and rum to a blender. Add ¼ cup of the prepared simple syrup. Blend until smooth. Taste and add additional simple syrup if needed.
  4. Divide between 2 glasses and garnish with mint leaves. Serve and enjoy!
