Boursin Stuffed Chicken Breast

Serves 4


4 small boneless skinless chicken breasts
1 package Herb & Garlic Boursin, cut in 4
1/2 stick butter, melted
1 cup Panko flakes
Salt, to taste
Pepper, to taste


  1. Preheat oven to 375 degrees F.
  2. Cut chicken breasts in half lengthwise to create a pocket. Place 1 piece of Boursin in each pocket, fold chicken over, tucking in the cheese. Seal opening shut with 3 toothpicks or twine. Season all sides of chicken with salt & pepper. Roll chicken in butter, then in panko flakes. Place in a baking dish and bake uncovered for 30 minutes.
  3. Remove and enjoy!
