Boursin Stuffed Chicken Breast

|4 small boneless skinless chicken breasts|
|1 package Herb & Garlic Boursin, cut in 4|
|1/2 stick butter, melted|
|1 cup Panko flakes|
|Salt, to taste|
|Pepper, to taste|
- Preheat oven to 375 degrees F.
- Cut chicken breasts in half lengthwise to create a pocket. Place 1 piece of Boursin in each pocket, fold chicken over, tucking in the cheese. Seal opening shut with 3 toothpicks or twine. Season all sides of chicken with salt & pepper. Roll chicken in butter, then in panko flakes. Place in a baking dish and bake uncovered for 30 minutes.
- Remove and enjoy!
