Cheesy Garlic Toast

|1 French baguette, sliced 1/2-inch thick on a diagonal|
|1 cup unsalted butter, softened to room temperature|
|1/4 cup fresh parsley, minced or 2 tablespoons dried|
|1 cup freshly grated Parmesan cheese|
|1 whole head garlic, cloves separated but skins left on|
|1/2 teaspoon sea salt|
- Preheat oven to 350 degrees.
- Preheat dry skillet on medium-low heat. Add garlic cloves to pan and toast slowly turning frequently to toast evenly until skins turn dark brown (about 15-20 minutes). Remove from pan and spread out on plate to cool. When cool to the touch but still warm, remove skins and slice off stem end of garlic and discard. Place toasted peeled garlic cloves in a small bowl and mash with a fork adding the sea salt, a little at a time, to create a paste.
- In a medium bowl, combine softened butter, Parmesan cheese, garlic paste, and parsley. Spread evenly on baguette slices and lay buttered side up on sheet pan or cookie sheet lined with parchment paper. Bake at 350 degrees for about 20 minutes or until golden brown and bubbly on top.
