New Orleans Old Style Pralines





Serves 12
Ingredients:
+ Add All Ingredients to Shopping List
1 1/2 cups sugar+ Add to Shopping List |
3/4 stick butter+ Add to Shopping List |
1 1/2 cups pecans, (roasted)+ Add to Shopping List |
1 teaspoon vanilla+ Add to Shopping List |
3/4 cup light brown sugar, (packed)+ Add to Shopping List |
1/2 cup heavy cream or half and half+ Add to Shopping List |
Directions:
- Combine all ingredients and bring to soft ball stage (230 -240 degrees), stirring constantly. Remove from heat. Stir until mixture thickens, becomes creamy and cloudy, and pecans stay suspended in mixture.
- Spoon out on aluminum foil or parchment paper. Makes approximately 15 to 20 pralines, depending on size. Allow 1 hour to cool and set.
- Note: To roast pecans, bake them on a sheet pan at 275 degrees for 20-25 minutes, until slightly brown.
