Rib Eye Steak Topped with Blue Cheese Butter

Ingredients:
6 ribeye steaks
Montreal Steak Seasoning
Olive Oil
Prepare butter first, at least 1 hour before starting to cook and serve steaks.
Preheat grill to medium-high heat. Rub both sides of steaks to cover with olive oil and sprinkle with Montreal Steak Seasoning. Grill on both sides until cooked to desired doneness, about 6 minutes (time depends on heat of the grill and thickness of the steak) on each side for medium. Top with Blue Cheese Butter rounds.
Blue Cheese Butter
1 cup unsalted butter, room temperature
1/2 cup crumbled blue cheese
2 tablespoons fresh chives, finely minced
2 cloves fresh garlic, finely minced or pressed
Sea salt, to taste
Freshly cracked pepper, to taste
Mix all ingredients together in a medium bowl. Shape butter into a log shape on some plastic wrap or waxed paper and refrigerate until ready to use. Slice off 1/4-inch rounds and place on top of grilled steaks.
