Sweet & Sour Smoked Sausage





Serves 4
Ingredients:
| 1 lb ring smoked sausage or kielbasa |
| Olive oil |
| 1 green bell pepper |
| 1 red bell pepper |
| 1 jalapeno and 1 serrano pepper, seeded and finely diced |
| 1 large sweet yellow onion, thinly sliced |
| Sea salt |
| Freshly ground pepper, to taste |
| 6 drops Chipotle Tabasco sauce |
| 1 jar La Choy Sweet and Sour Sauce, 10 oz. |
| Hot cooked rice, for serving |
| Fresh cilantro, chopped, for garnish, if desired |
| Texas Toast, grilled, for serving |
| 2 cloves fresh garlic, finely minced |
Directions:
- Preheat grill to medium-high heat or until coals are hot. Grill smoked sausage on both sides until browned and sizzling.
- While sausage is grilling, preheat large skillet over medium-high heat, add 1 tablespoon olive oil, onions, and all peppers; sauté until translucent, about 5 minutes. Sprinkle with salt and pepper and add minced garlic. Add jar of sweet and sour sauce. When sausage is cooked, remove to cutting board, rest 5 minutes and slice into 1/4-inch pieces; stir into sweet and sour mixture, season to taste with salt and pepper. Serve over hot cooked rice and garnish with fresh cilantro, if using, with grilled Texas toast on the side.
- *Alternate Cooking Method: For an even quicker meal, slice the sausage ¼-inch thick and sauté with the veggies instead of grilling.
