Mozzarella Rumaki

Serves 4


Ingredients:

8 oz fresh mozzarella ball, cut in 1-inch chunks or cilingene
6 slices prosciutto, sliced thin and cut in half
1 cup balsamic vinegar

Directions:

  1. Wrap small piece of prosciutto around piece of mozzarella, stick toothpick through center to seal.
  2. Place on nonstick cookie sheet and bake at 350° for 10-15 minutes until prosciutto is slightly crispy. Meanwhile, place balsamic vinegar in saucepan on stove over medium heat. Let balsamic cook until reduced by two-thirds. Remove and set aside.
  3. When mozzarella comes out of the oven, drizzle with balsamic and serve!
