Grilled Stuffed Portabella Mushrooms





Serves 2
Ingredients:
| 1 cup chopped shiitake mushrooms |
| 1 clove garlic, minced |
| 1 shallot, minced |
| 2 tablespoons fresh basil, thyme or oregano |
| 2 tablespoons olive oil |
| 1/2 cup grated Parmesan cheese |
| 2 portabella mushroom caps |
| Salt, to taste |
| Pepper, to taste |
Directions:
- In mixing bowl combine all ingredients except olive oil and portabellas.
- Brush both sides of portabella with olive oil, season with salt and pepper and place on medium-hot grill, stem side down. Turn after 3 minutes and place half of mixture on each, cover grill and let warm through. Serve hot!
