Roasted Tomato & Olive Tapenade





Serves 2 cups
Ingredients:
| 1 pint grape tomatoes |
| 1 cup Green Olives in Chili mix |
| 1/4 cup balsamic vinegar |
| 2 cloves garlic |
| 1/4 cup toasted pinenuts |
Directions:
- In greased baking dish place tomatoes, olives, garlic & balsamic vinegar. Toss together and spread out. Bake at 375 degrees F for 20-25 minutes or until tomatoes burst and balsamic vinegar is syrupy.
- Place in food processor and pulse 3-4 times, or until semi-chunky Serve over brie or triple cream cheese with pinenuts sprinkled on top.
