Tomatoes with Rembrandt Cheese Filling

Ingredients:
8 tomatoes
3 eggs
1 tablespoon bread crumbs
7 oz Rembrandt cheese, grated or shredded
7 oz finely chopped spinach
Salt, to taste
Pepper, to taste
Directions:
Preheat oven to 400 degrees F.
Cut the top off the tomatoes and take out the pulp with a spoon. Beat the eggs and salt & pepper. Add the bread crumbs, cheese and chopped spinach. Mix well. Fill the tomatoes with this filling and put them in a baking dish.
Bake the tomatoes for 12 minutes in a preheated oven at 400 degrees F.
