Horseradish Yukon Gold Mash
Serves 4-6

Ingredients:
| 6 large Yukon Gold potatoes |
| 3/4 cup half & half |
| 1/2 stick unsalted butter |
| 1/4 cup grated fresh horseradish |
| 2 scallions, chopped |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Place whole potatoes in stockpot and cover with water. Bring to a boil and continue cooking potatoes until, when pierced with a knife, they slide off. Drain water and let sit on the stove a minute.
- Meanwhile combine the cream and butter in a saucepan until hot and melted, then start mashing the potatoes. Add a little cream mixture at a time until all added. Then add onions, salt, pepper & horseradish. Mix well to combine and serve.
