Raspberry-Pepper Glazed Ham

Serves 12


Ingredients:

10 lb bone-in double smoked ham
1 1/2 cups raspberry preserves
2 tablespoons apple cider vinegar
3 whole chipotle peppers in adobo sauce, drained & chopped
3 cloves garlic, minced
Fresh raspberries, optional

Directions:

  1. Place ham in shallow roasting pan & bake at 325 degrees F for 2 hours.
  2. While ham is baking stir together in saucepan the raspberry preserves, vinegar, peppers and garlic. Bring just to boiling. Reduce heat and simmer uncovered for 5 minutes. Remove from heat.
  3. After the 2 hours has passed, brush ham with some sauce and bake another 20 minutes, brushing with sauce every 10 minutes. Remove ham, cover with foil and let stand 15 minutes before serving. Carve and serve remaining sauce when passing the ham. Garnish with fresh raspberries if you like.
