Spinach & Cheddar Stuffed Chicken Breasts

Ingredients:
4 boneless skinless chicken breasts, butterflied
1/2 " thick by 4" long stick cheese, cheddar or sharp provolone
2 cups roasted red pepper or sun-dried tomato pesto
1/2 cup grated Parmesan cheese, more if desired
Salt, to taste
Pepper, to taste
2 cups spinach
Directions:
Open all chicken breasts and spread 1 cup spinach on one side of each. Then place cheese on top of the spinach and fold other side over the filling.
Place all chicken in greased baking dish to fit closely together. Season the top of chicken with salt and pepper. Then spread the pesto over each. Cover and bake at 350 degrees F for 30 minutes, then remove lid, sprinkle more cheese on top if you like and bake another 10 minutes.
